Pumpkin Bread Pudding, with Karviva’s Empower

RECIPE – Pumpkin Bread Pudding made with Karviva’s Empower

Ingredients

  • 8 thin slices of cinnamon raisin toast
  • 1 (15 oz) can pumpkin or 15 oz fresh streamed pumpkin
  • 1 bottle KARUNA’S EMPOWER
  • 1 cup milk of choice
  • 2 tsp vanilla extract
  • 4 eggs and 2 egg yolks
  • ½ cup brown sugar
  • 2 tbsp pumpkin spice
  • ¼ tsp sea salt
  • yogurt for serving

 

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly oil an 8” square baking pan.
  2. Slice the toasts into smaller rectangles and create the first layer at the bottom of the pan. On top of the initial layer of bread, keep layering while adding in the pumpkin. Keep stacking until you run out of bread and pumpkin. There is no set pattern; just make sure each slice will have layers of toast and pumpkin.
  3. In a large mixing bowl, whisk together KARUNA’s EMPOWER, milk, vanilla extract, eggs, brown sugar, pumpkin spice, and sea salt. Pour the custard over the bread and press the bread down to ensure everything gets covered.
  4. Let the bread pudding rest for 10 minutes before baking for 30 minutes, turning the heat down to 200°F (93°C), and then baking for another 15 minutes or until a toothpick comes out clean when inserted into the middle.
  5. Serve warm with yogurt. Enjoy!
