Preheat the oven to 350°F (175°C). Lightly oil an 8” square baking pan.
Slice the toasts into smaller rectangles and create the first layer at the bottom of the pan. On top of the initial layer of bread, keep layering while adding in the pumpkin. Keep stacking until you run out of bread and pumpkin. There is no set pattern; just make sure each slice will have layers of toast and pumpkin.
Let the bread pudding rest for 10 minutes before baking for 30 minutes, turning the heat down to 200°F (93°C), and then baking for another 15 minutes or until a toothpick comes out clean when inserted into the middle.
Serve warm with yogurt. Enjoy!
