Happy Autumn!  Yes we are in Fall already! A time of cool sweaters, colorful leaves, pumpkin spice frenzy, and apple picking! Are you excited? I am! What better way to fully immerse yourself into the Autumn season than with  comforting Apple Baked Oatmeal!
This recipe will have your entire home smelling amazing! It’s made with gluten-free oats, raisins, organic cane sugar, cinnamon and our Empower Protein and Fiber Drink!

Apple Vegan Baked Oatmeal (Gluten Free, Refined Sugar Free)
Apple Baked Oatmeal is a delicious breakfast dish that will give you comfort all Autumn long! Its both vegan and gluten-free! Prepare the night before for a quick breakfast in the morning!

Preheat oven to 350 degrees Fahrenheit.

First, make your flax egg. Grab a small bowl and add ground flaxseed to water. mix together and set aside. It will thicken up to a gel-like eggy consistency.

Next used your apple slicer to slice apples leaving out the core. Then chopped your apple slices into small pieces. (I left the skin on but if you prefer you can peel apple first)

Grab your 2-quart baking dish and greased a little with vegan butter. Add half of your chopped apples in baking dish and set aside.

Next in a large mixing bowl add your gluten-free old-fashioned oats, nutmeg, cinnamon, baking powder, sugar, pecans, and raisins and mix well. Next add your flax egg, Karuna’s Empower Protein and Fiber Drink, melted butter, the other half of apples, and applesauce and mix until fully combined.

Pour mixture over chopped apples in baking dish and spread evenly. Bake in the oven uncovered for 20-25 minutes until oatmeal is golden brown. Serve for breakfast and enjoy!
Note
Xylitol is a natural sugar that is low in calories, doesn’t spike blood sugar, and used in many oral hygiene products as it is known to help prevent dental decay. You may substitute organic cane sugar if you don’t have access to xylitol.
This will also be great with pears!
