Description

What better way to start the day than with a warm oatmeal muffin that hugs the aroma of freshly brewed coffee and cozy chai spice! These scrumptious muffins feature our newest addition, Silky Oat! Packed with prebiotic fiber and protein, this whole plant smoothie is one that you will love! Trust us, you’ll need to bake these muffins asap! They’re so delicious!

 

Instructions

  1. Make the muffins: Preheat oven to 350°F (175°C). Oil a 6-cavity muffin baking tray. In a small bowl, add in the warmed oat milk, hot espresso, brown sugar, and rolled oats. Mix and let sit for 5 minutes. In a large mixing bowl, add in the rest of the ingredients with the oatmeal mixture. Whisk until well-combined. Divide the batter evenly among the six cavities. Bake for 16-18 minutes or until a toothpick comes out clean when inserted into the middle.

  2. Make the glaze: While the muffins are baking, in a small bowl, whisk together all the ingredients except the walnuts. Chill in the fridge for 5-10 minutes.

  3. Assemble: While the muffins are still warm, add two tablespoons of the yogurt glaze on top. Top with crushed walnuts, serve the muffins warm, and enjoy!
