
COCONUT OVERNIGHT OATS WITH KARVIVA MANGO-LEMON CURD

In a medium size pot, add in Karviva Mango, lemon juice, eggs and egg yolks. Turn the element on to low and whisk well.

After a couple minutes, pour in the coconut sugar and continuously stir all ingredients together until the sugar has dissolved and the curd begins to thicken (about 7-10 minutes). Once thick, take the curd off of the heat and set aside to cool in the fridge.

In a separate bowl, combine all of the coconut oats ingredients together. Mix well and set aside in the fridge for 2 hours or overnight.

When ready to plate/serve, layer the curd and the coconut overnight oats and top with toasted coconut and fresh mango.
