Back to school is around the corner. That means lots of rushed and busy mornings. During this time it is crucial to have quick foods to eat on hand that will keep you alert and focused throughout the school year. These chestnut no bake energy bites are the perfect remedy!
The idea to use chestnuts in a no bake energy bite recipe was inspired by the traditional chestnut cake. When roasted chestnuts are very soft and sweet and make the perfect base for a chestnut cake (a recipe that is popular in Asian ans European countries) however it is very labor intensive to make. So I took most of the most popular elements of that dessert and turned it into some simple, easy, and quick to eat either as a snack or dessert!

Karuna’s Pro Fit Juice is our Vegan With Curves Building ingredient this week. I partnered with long time supporter of the Vegan With curves brand Karuna Drinks to really bring this recipe to light. I LOVE Karuna’s Pro Fit drink. (It’s my favorite next to Rejuvenate drink made with Longan Fruit!)
Naturally sweeten with dates and chestnuts and the pear balances out the sweetness with a slight tartness to it. This drink has 26 grams of healthy whole curvy carbohydrates.

For Outside Coating
For Individual Bites

Grab all your ingredients for your coating; hazelnuts, shredded coconut, and sea salt and add to food processor. Process until finely chopped and set aside.

Next grab all your ingredients for your individual bites; roasted chestnuts, dates, cinnamon, lemon juice, sea salt, and Karuna’s Pro Fit Drink to a food processor. Process until completely smooth. If mixture is too dry add a little more of Karuna’s Pro Fit Drink.

Once done processing, scoop mixture with your hands and start forming mini balls. Take each ball and roll around in your coating mixture and place on a parchment paper lined pan. Do this for each one and refrigerate for 30 minutes to firm up.

Serve as a quick snack! Will keep in refrigerator for 3 to 4 days and can freeze for a week. Enjoy!
Note
If you currently do not have access to Karuna’s Pro Fit Drink, use a flavored plant based milk like vanilla almond milk or coconut milk instead.
You can add coco powder to this if you desire for a more chocolate taste.
Use whatever nuts you desire for the coating; pecans, almonds, Brazil nuts, etc or a combination. There are no limits!
