Ingredients
For the muffin
- 1 cup KARUNA’S SILKY OAT
- ¼ cup oat milk, warm
- 5 oz espresso, hot
- ¼ cup brown sugar
- 1 egg
- 1 cup old fashioned rolled oats
- 1 cup oat flour
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp sea salt
- 1 tbsp chai spice
- 1 tsp vanilla extract
- oil for coating pan
For the yogurt glaze and topping
- ¼ cup KARUNA’S SILKY OAT
- 1 cup plain non-fat Greek yogurt
- ½ tbsp cinnamon powder
- ¼ cup crushed walnuts
Instructions
- Make the muffins: Preheat oven to 350°F (175°C). Oil a 6-cavity muffin baking tray. In a small bowl, add in the warmed oat milk, hot espresso, brown sugar, and rolled oats. Mix and let sit for 5 minutes. In a large mixing bowl, add in the rest of the ingredients with the oatmeal mixture. Whisk until well-combined. Divide the batter evenly among the six cavities. Bake for 16-18 minutes or until a toothpick comes out clean when inserted into the middle.
- Make the glaze: While the muffins are baking, in a small bowl, whisk together all the ingredients except the walnuts. Chill in the fridge for 5-10 minutes.
- Assemble: While the muffins are still warm, add two tablespoons of the yogurt glaze on top. Top with crushed walnuts, serve the muffins warm, and enjoy!
