Instructions

  1. Prepare the Mango Lemon Curd:

    • In a medium-sized pot, add Karviva Mango Juice, lemon juice, eggs, and egg yolks. Turn the heat to low and whisk well.
    • After a couple of minutes, add the coconut sugar and continuously stir until dissolved. Cook until the mixture thickens (about 7–10 minutes).
    • Remove from heat and let cool in the fridge.
  1. Prepare the Coconut Oats:

    In a separate bowl, combine coconut milk, rolled oats, maple syrup, chia seeds, and a pinch of salt. Mix well and refrigerate for 2 hours or overnight.

  1. Assemble:

    • Layer the coconut oats and mango lemon curd in a glass or bowl.
    • Top with toasted coconut flakes and fresh mango cubes.
