Inspired by the classic combination of peaches and raspberries, this colorful summer salad brings together tender greens, fresh mint, creamy tree-nut cheese, and toasted almonds. A fruity vinaigrette made with Karviva Joy-D adds a bright peach, mandarin, and kiwi finish.

Ingredients
    Karviva Joy-D Vinaigrette
  • 1/3 cup Karviva Joy-D Immunity Whole Plant Juice (80 mL)
  • 3 tablespoons white wine vinegar
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup extra-virgin olive oil (80 mL)

  • 8 ounces fresh spring mix (225 g)
  • 2 small fresh peaches, pitted and sliced
  • 1/4 cup packed fresh mint leaves
  • 6 ounces soft tree-nut cheese, formed into approximately 12 small balls (170 g)
  • 1 container fresh raspberries (6 ounces/170 g)
  • 1/4 cup sliced natural almonds, lightly toasted (30 g)
Instructions

    Add the Karviva Joy-D, white wine vinegar, salt, pepper, and olive oil to a tightly sealed jar. Shake vigorously until the vinaigrette is blended.

    Arrange the spring mix on a large rimmed platter.

    Top the greens with the peach slices, mint leaves, tree-nut cheese balls, and raspberries.

    Drizzle with the desired amount of Karviva Joy-D vinaigrette.

    Sprinkle the toasted almonds over the salad and serve immediately.
