Sunny Orange Upside-Down Cake with Karviva ACE Sport

Ingredients

For the orange topping

2 small oranges, thinly sliced and seeds removed
2 tablespoons unsalted butter, melted
⅓ cup light brown sugar

For the cake

1/2 cups all-purpose flour
1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cardamom, optional
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 tablespoon finely grated orange zest
1/2 cup plain Greek yogurt or sour cream
1/2 cup Karviva ACE Sport Sunny Orange

For the Sunny Orange glaze

1 cup Karviva ACE Sport Sunny Orange
1 tablespoon sugar, optional

Instructions

Preheat the oven to 350°F. Grease a 9-inch round cake pan and line the bottom with parchment paper.

Pour the melted butter into the pan and sprinkle the brown sugar evenly over it.

Arrange the orange slices over the sugar, slightly overlapping them.

Whisk together the flour, baking powder, baking soda, salt, and optional cardamom.

In a separate bowl, beat the softened butter and sugar until light. Add the eggs one at a time, followed by the vanilla and orange zest.

Mix in the yogurt. Alternate adding the dry ingredients and ½ cup Karviva ACE Sport, mixing only until combined.

Carefully spread the batter over the orange slices.

Bake for 35–40 minutes, or until a toothpick inserted near the center comes out clean.

Cool in the pan for approximately 15 minutes. Run a knife around the edge, then carefully invert the cake onto a serving plate.

Simmer the remaining Karviva ACE Sport until reduced to approximately ¼ cup. Brush the glaze lightly over the warm cake.

Serve warm or at room temperature, alone or with lightly whipped cream. Store covered at room temperature for up to two days or refrigerate for up to four days.
