Coconut Overnights Oats with Karviva Mango-Lemon Curd

Mango Lemon Curd 

  • 1 cup Mango Karviva juice 
  • 2 large lemons, juiced 
  • 1/4 cup coconut sugar 
  • 2 eggs
  • 2 egg yolks 

 

Coconut Oats

  • 1.5 cups coconut milk 
  • 1 cup of rolled oats
  • 2 tbsp maple syrup 
  • 2 tbsp chia seeds
  • Pinch of salt

 

Toppings 

  • Toasted coconut flakes
  • Fresh mango

Instructions

  1. In a medium size pot, add in Karviva Mango, lemon juice, eggs and egg yolks. Turn the element on to low and whisk well. 
  2. After a couple minutes, pour in the coconut sugar and continuously stir all ingredients together until the sugar has dissolved and the curd begins to thicken (about 7-10 minutes). Once thick, take the curd off of the heat and set aside to cool in the fridge. 
  3. In a separate bowl, combine all of the coconut oats ingredients together. Mix well and set aside in the fridge for 2 hours or overnight. 
  4. When ready to plate/serve, layer the curd and the coconut overnight oats and top with toasted coconut and fresh mango.
